What I've Learned: What the Canned Coconut Milk Lobby DOESN'T WANT YOU TO KNOW!!!
Canned coconut milk is vital for making a good curry or coconut rice (duh on the later), but it's sort of expensive, and I always forget to buy it. Turns out you can reconstitute shredded coconut, which is cheap as hell, and often in my pantry.
- Boil 2 cups of water
- Pour it into a blender with 2 cups of shredded coconut
- Whip it into a frenzied froth (hot things can burn you, especially when accelerated!)
- Strain it into whatever you're cooking
BONUS: You can generally squeeze another cup or two of water through the coconut mash, and still get pretty serviceable coconut milk.
DOUBLE BONUS: Your garbage can or compost bucket will smell *awesome* after you clean up.
